I love garlic, the taste, the smell, the fact it’s so good for you! It’s been used medicinally as well as for culinary deeds for centuries. Garlic has remarkably high levels of Vitamins and Minerals and there’s no cholesterol. Great!
I cook a lot. I cook with garlic, almost all of the time so to save time I made a preservative free garlic purée. Here’s what you’ll need and how to make your own.
- Lots of garlic
- Ovenproof dish
- Little jar
(Heat your oven to 180°C, 350°F, Gas mark 4)
Don’t peel the garlic, leave it in it’s skin and place in your oven proof dish. Toss some oil on top. I use red palm oil, but you can chose an oil of you preference.
Roast in the oven for approximately 20 minutes, checking after 10 to ensure the bulbs aren’t burning.
Rest and dab on some kitchen roll.
Cut the base of each bulb and squeeze the garlic out into a small jar. If you have a mini chopper or food processor you can also use that.
