Chocolate Biscuits – Paleo, Naturally!

Biscuits, oh lovely lovely biscuits used to be a big part of my diet, I’d go through them quicker than Bolt runs the 100m! Any biscuit, I wasn’t fussy. If it were a dunker, even better! There’s nothing quite like tea and biscuits. In the Paleo world there is – It’s a herbal tea and these Paleo biscuits!

(My favourite tea at the moment is Choco by Yogi Tea, it’s an Aztec blend that can be enjoyed anytime of the day, especially with something sweet. Available in Holland and Barrett, most health food shops and online from amazon)

I started thinking of biscuits recently when discussing with a colleague about corporate events, where you’re constantly offered tea, coffee and biscuits. With an event coming up I got to thinking about what I could eat at these events. Not wanting to be a nuisance I thought I’d make my own and take them along with me to gobble throughout the day. I’m not one for precise baking so I needed to think of something that would hold together without intricate measurements, something quick and easy. Here’s what I came up with…

Paleo Biscuits 

These biscuits are nothing but 4 simple, everyday, run of the mill ingredients – which is another reason to try them. There is no need to go out and buy some very specific items that you may have trouble finding. Even more so you could skip the cinnamon and the cacao powder to whittle it down to just 2!

All that’s required is: blend, bake, cool, nosh.

Ingredients
  1. 2 Bananas
  2. 1 cup of desiccated coconut (80g)
  3. 2 level teaspoons of raw cacao powder
  4. 1/3 teaspoon of ground cinnamon
Instructions
  1. Preheat your oven to 180°C, 350°F or Gas Mark 4
  2. Line a baking tray with grease proof/baking paper
  3. Blend all ingredients together
  4. Leave to rest for 2 minutes
  5. Roll into small balls
  6. Gently press into biscuits shapes
  7. Bake for 25 minutes
  8. Leave to cool
  9. Then by all means gobble away!
