Paleo Mousse for Mindfulness! (Recipe now even more yummy!)

You know that feeling when life is just one big busy blur? Event after thing, after trip after hurdle etc! In the past 3 months we’ve moved, visited Iceland, Germany and are moving again in a few weeks!During this time so much has happened that’s really tested patience as well as resolve that being mindful has been key to staying in check mentally and nutritionally. Whilst eating well, it’s been anything quick and easy – often not taking the time to be appreciate the taste, smell, textures of the Paleo style food we’re eating. This will sound odd but this recipe changed that lack of awareness! Yes, a mousse did that!

(Paleo) Mousse for Mindfulness!

Amongst this busy spell I found a recipe for Paleo mousse, a real treat and pleasure to whip up – it was quicker than any Paleo pudding I’ve ever made. I once made a mousse for my boyfriend when we were first dating, it was a traditionally crafted chocolate mousse, it was very good but it took time, precise effort and patience. Having lacked these 3 key areas in my life at the moment I was looking for something quick!

The taste was so decadent it stopped me in my rush to finish it, every spoonful was a little bit of loveliness and I wanted to savour it for as long as possible. So, that’s how a mousse made me more mindful.

I can’t take credit for this recipe but I wanted to share it. This mousse not also has the benefit of being a healthy and Paleo friendly version but it’s as easy to make as blitzing a smoothie. I even used my Nutribullet!
The recipe offers vanilla as an optional extra, I’d recommend adding as it takes the bitterness of raw cacao away and gives a lovely flavour without taking away from the chocolatey heaven that awaits.

Here’s what do you need

Avocado, dates, cacao powder, vanilla and water. Everything that’s in any healthy kitchen. 🙂

I go to my local shop for avocados as they are ready to eat, plus better value and bigger than in any major supermarket. The same for dates, I’m lucky to live near a great Turkish shop who sell fresh medjool dates, which are in my opinion always the best to go for.

Recipe – Updated!

I posted the recipe below with 1 cup of cacao to 1 avocado – BUT – try 2 avocado to 1 cup of cacao and it’s much much smoother and avoids any bitterness cacao can produce. 🙂

  1. 2 Avocados
  2. 1 cup of raw cacao powder (125g)
  3. 6 pitted dates
  4. 1/2 vanilla pod, or a drop of essence
  5. 1 to 1 1/2 cups of water
  1. Place everything in a blender
  2. Press blend, start, go - whatever makes it whizz!
  3. Spoon into cups
  4. Chill for at least 10 mins (if you can) or until you're ready to indulge.

What to eat with this delightful mousse is somewhat of an eaters choice. The beauty of chocolate is anything goes well with it, am I right? I’d recommend, Paleo pancakes, strawberries, blueberries, banana, a drop of Bali Nutra Coconut Syrup, the list is endless really!
DO try mixing almond butter in, at a 50-50 ratio, and you’ll get what tastes like ferrero rocher! mmm


p.s How could I forget the best part…. no raw eggs = spoon licking!!
