Paleo Pear Chocolate Brownies

What do you do when you’ve got a spare hour? I cook! Here’s a quick and easy recipe for Paleo pear chocolate brownies, that will take you no time at all! Hands down, these are the healthiest brownies I’ve ever eaten. With no wheat, grain or dairy insight they are a perfect Paleo snack or dessert.

Ingredients
  1. 3 Medium conference pears
  2. 100g Unsweetened cocoa powder
  3. 100g Coconut flour
  4. 100g Organic 80% dark chocolate - for melting
  5. 50g Organic 80% dark chocolate - cut into rough chunks
  6. 30g Raw honey
  7. 30g Coconut oil
  8. 4 eggs
Instructions
  1. Pre-heat your oven to 180°C, 350°F or Gas mark 4
  2. Sieve the Coconut flour and Cocoa into a large mixing bowl
  3. Add the honey, eggs and coconut oil
  4. Grate the 3 pears, no need to peel them, and add to the mixture
  5. Melt 100g of chocolate, slightly cool and add to the mixture
  6. Take a shallow cake tray and line with greaseproof paper
  7. Empty the mixture in and spread evenly
  8. Sprinkle over the chocolate chunks and gently push into the mixture (as if you're sowing seeds)
  9. Bake for 20 minutes, check with a knife, if it comes out clean they are done
  10. Leave to rest and don't cut for at least 1 hour

The coconut flour combined with dark chocolate gives the brownies a dense richness, whilst the grated pears keep everything wonderfully moist. The coconut flour I use is available from most Holland and Barret stores or Amazon UK: here. Alternatively you could use almond flour or finely ground almonds.

If you’ve thought about the Paleo diet and thought that due to the lack of cakes you might struggle, I hope these could change you mind! I’ve been living Paleo in the UK for sometime and love the results, as well as love creating Paleo friendly treats such as these. Here’s my Paleo life in a nutshell, living Paleo in the UK really can be a piece of… well… brownie!
